Here’s a simple, no-bake sweet that riffs on peanut laddoos, a bite-size Indian confection made of ghee, sugar and nuts, with a chocolate coating inspired by buckeyes, the peanut butter and chocolate treat popular in Ohio It was dreamed up by Hetal Vasavada, the blogger and author of the dessert cookbook “Milk & Cardamom,” which combines the traditional Indian flavors she grew up with and the Western sweets she encountered as an American kid in New Jersey The cardamom, ghee and jaggery provide both an interesting twist to the traditional flavor combination and a slightly grittier texture, which Ms

A cross between a cookie and candy, classic saltine toffee is made by pouring a quickly made brown sugar caramel over a layer of salty crackers, baking it, then coating the whole thing with chocolate This version uses a copious amount of bittersweet chocolate for the topping, which helps offset the sweetness of the toffee mixture (Note that the higher the cacao percentage, the less sweet this treat will be.) The crushed candy cane topping makes this perfect for tucking into a holiday cookie box, but you can make it anytime of year

Fudge can be fickle, easily becoming grainy and hard if it’s beaten too much or if the sugar mixture crystallizes, the result of undissolved sugar crystals Try to make fudge in a cool environment that is not humid, and, if the final texture isn’t quite what you desire, know that cooking the fudge at a temperature that’s a few degrees lower the next time will result in a softer fudge, while a few degrees higher will make it firmer Fudge also dries out easily, so make sure it’s well wrapped.

Pastillas de leche are Filipino candies traditionally made by cooking down carabao (water buffalo) milk for hours (Although the recipe is native to the Philippines, the name comes from Spanish: Pastilla describes the lozenge shape and leche is milk.) Abi Balingit, the author of the dessert cookbook “Mayumu” (Harvest 2023), offers a beautifully simple, no-cook shortcut: You sift whole milk powder and salt, then mix in condensed milk until a dough forms Roll into snowy white logs, then dust the soft, creamy treats in sugar

These stunning cookies would be a gorgeous addition to any holiday cookie assortment, and they are not much more difficult than any roll-and-cut cookie The cookie base is lightly sweetened and tender, thanks to powdered sugar and an extra egg yolk, and the glass-like centers are made from crushed hard candies that melt in the heat of the oven Use a few different colors of candy for a tie-dye effect or single colors for a bolder look

Mbatata is the word in Chichewa for the dense, creamy variety of this starchy root vegetable In Malawi, mbatata is typically prepared by roasting whole or simmering cubes in liquid until soft enough to crush This recipe, a modern take on mbatata that’s also found in Malawi, is a soft baked cookie using sweet potato purée, lightly folded with flour, melted butter, brown sugar, dried fruit and spices

French green lentils (Puy lentils) make a hearty base for this vegetarian shepherd’s pie They may be slighter harder to find than other lentils, but they’re worth the extra effort Unlike brown or red lentils, green lentils retain their shape and texture after cooking, which means they stand up well to a long simmer and this rich potato topping
